Hey everyone! Last week I wrote a post about tofu steak and mentioned that I made this orzo dish as a side. The recipe for this is much easier and definitely doesn’t take as long to make.
For the orzo, I followed the recipe on the back of the box it came in. I made around 1 cup of orzo and used 2-3 cups of water (I think… definitely follow your box!). After the orzo is made, you are going to need the following:
In a large bowl, mix together the buttermilk, lemon juice, sour cream, chili powder, salt, black pepper, red pepper, garlic, parsley and 2 tablespoons of cilantro.
Place the beans, corn, tomatoes (which I cut into fourths), green onions (chopped) and the last tablespoon of cilantro into the bowl of orzo and toss together.
Pour the buttermilk sauce on top of the orzo and mix well. You can also leave this sauce on the side for dipping. And you are done! I actually made this as a side for the tofu steaks.
